I love summer

Nice weather.

No lessons to plan.

Time to cook. And eat. And yum!

It took me two evenings (the crust is complicated creature that needs to cool and then be baked), but the strawberry lemon curd tart is delish. I just had my first nibble. It still hasn't cooled all the way. But I think it might be worth trying variations of in the future. Blueberry lemon curd tart perhaps? Or individual sized as is? Whatever. So good.

Wait...did I tell you that I made this a couple of weeks ago? It really is amazing! And the blueberries already crossed my mind. I can't wait for blueberry season! Enjoy!

Upon eating more (as in 2/3 of pie is no longer in the plate and my housemate is not here), I think I'll try the curd with less sugar. Maybe down a quarter cup at a time?

We are going to have a delicious summer!

Well, actually, I did use a different recipe for the curd that had less sugar, which is probably a good thing with the whipped cream and strawberries. I'm still highly amused that we both tried the same recipe. And it wasn't even on NPR.
